Last winter I did a day trip up to a ski shelter in the Cascade mountains. In the shelter were two really nice teenagers who told me their family had been going to the ski shelter for New Years for the last 10 years! I asked what their favorite meal from this trip and they said, “Oh that’s easy, it’s always the Golden Curry.” They showed me the package and the next time I went to the
asian market in town I picked some up. The package has 8 compressed cubes of curry. They have all the spices and enough oil to hold the cube together, but not too much oil to make it messy. I use one cube per serving. I have made my own powdered curry for a couple of years and it was great, but this stuff is amazing! I add a couple tablespoons powdered coconut milk to each serving and that takes it over the top. When you are out on the trial, it tastes better then any restaurant! One cube (enough for one serving) is just over 1 oz(31 g) and about 165 calories. There are four temperatures. Mild, medium hot, hot and extra hot. I like spicy food, but extra hot was what I think of as medium in most restaurants. Enjoy and let me know what you think!

Adding this idea to my list of ‘fast PCT meals when my resupply boxes start to lack’. I imagine it would go pretty good with a pack of ramen and a handful of dehydrated vegetables.

Ramen is awesome in this meal! My family avoids wheat, so we sometimes put in rice noodles. My basic recipe is 1/2 cup of starch, 1/4 cup of dried vegetables(but I often throw in more) and 1/4 cup of dried chicken or Krab(the artificial stuff dries really well). Eat well!

If couscous isn’t your grain of choice, there’s always rice and potato flakes to bulk out your meal. While it’s fairly easy to concoct a decent feast from readily available dried foods, if you want total control over backcountry cuisine, you should look into getting a food dehydrator.
