Sauces

Thai Peanut Sauce | Enchilada Sauce | Marinara/Pizza Sauce | Cream of Anything Soup | Parmesan Cheese Sauce | Pesto | Curry |

Thai Peanut Sauce

3 tbsp peanut butter powder
4 tbsp milk powder
1 tsp garlic powder
1 tsp ginger root powder
1/2 tsp salt
2 tsp sugar
1 tsp crushed red pepper
1/4 tsp cumin powder
1/4 tsp curry powder
1/4 tsp paprika

Use 2-3 Tbls powder per serving.

Enchilada Sauce
2 Tbls tomato powder
2 tsp taco seasoning
1/2 tsp dried jalapeño

This recipe is per serving. Make great enchiladas by adding the sauce mix with rice veggies and protein and let rehydrate. Once you are about 2-3 minutes from being done rehydrating, add a handful of tortilla chips and mix in.

Pizza Sauce/Marinara Sauce
2 Tbls tomato powder
1 tsp Italian spices
1 tsp onion powder
1/2 tsp garlic powder
2 tsp homemade broth powder

Start with a small amount of water(warm works better, but cold is fine) and add more to get your desired consistency. Less water for pizza, more for marinara.

Cream of Anything Soup
1 cup whole dry milk (Nido is my favorite)
2 tsp chicken broth powder
1/4 cup instant potatoes
1 Tbls parsley
1/2 tsp dried onion powder
1/2 tsp dried garlic powder
1 tsp Italian seasoning
1/4 cup of your choice (mushroom, broccoli, chicken, potato, corn)

Mix everything well.  1/4 cup per serving

Parmesan Cheese Sauce
1 cup dry milk (whole milk powder like “Nido” is the best”
1 1/2 tsp dried garlic powder
1/2 tsp onion powder
1/4 cup shelf stable parmesan

Mix all these ingredients together well. For one person combine: 1/2 cup instant rice 1/4 cup dried potatoes 1/4 cup dried broccoli 3 Tbls cheese sauce powder 1 cup of water plus a little more depending on how saucy you want it.

Pesto
Easy method
1 Tbls dried basil
1 tsp shelf stable parmesan
1 Tbls crushed walnuts
1/2 tsp garlic powder
pinch of salt

Better method (if you have access to fresh basil)
2 cups packed fresh basil leaves
1/2 cup shelf stable parmesan
1/2 cup walnuts
3 cloves garlic
1/8 tsp salt

Use about 1 – 2 Tbls pesto per serving. If you are willing to bring it in, olive oil makes the meal much more rich and improves the texture. You can use straws like they do in the image here. Use up to 2 Tbls of olive oil per serving. I usually use 1 Tbls and it is great.

Curry

Add all the following ingredients into a bowl and mix well.  A whisk or morter and pestle is best as it really mixes the spices well, but I have used a spoon before and it works fine.

1/2 tsp chili powder
2 tbls cumin
1 tbls coriander
1 tsp onion powder
1/2 tsp garlic powder
1 tbls turmeric
1 tsp salt
1/2 tsp sugar
This is your bulk curry powder.  Store this in a small container or ziplock for quick use when prepping meals.
Here is the meal I made in my youtube video, but remember that you can substitute any veggies or protein that you want.
Curry Chicken and rice with broccoli (Serves 1)
1 Tbls Curry powder(use store bought or above recipe)
3 Tbls Milk powder(coconut powder is the best, but whole milk powder is great too.  Nido is the brand of whole milk I like.)
1/2 cup instant rice
1/4 cup dehydrated veggies(from Harmony House)
1/4 cup Chickenish Bits(Flavored TVP from Harmony House)
Optional additions:
More chili powder (for more heat)
1 Tbls dried jalapeños
2 Tbls dried currents or rasins(I like currents better).
