Dinners

Why call it dinner when you can have it any time of day?  Generally, I use my pantry method for creating dinner and lunch meals, but here I list out a few combinations that I really like.  Of course substitute if you don’t have an ingredient or want to try out a variation!  All these recipes are for one person.  Double for two, triple for three…

Tuna Casserole:  1/2 cup instant rice or 3/4 cup egg noodles, 1/4 cup dried tuna, 1/4 cup dried peas, 1/4 cup cream of anything soup.  Add 1 1/2 cups boiling water, stir well and let sit for 15-30 minutes in a cozy.

Chicken Curry:  1/2 cup instant rice or 1/2 package ramen noodles, 1/4 cup dried chicken 1/4 cup dried vegetables (mushrooms, sweet(or regular) potato, broccoli), 1 cube Golden Curry.  Add 2 cups boiling water, stir well and let sit for 15-30 minutes in a cozy.

Tuna Mac:  1/2 cup elbow macaroni, 1/4 cup dried tuna, 1/4 cup (or more) dried broccoli, 1/4 cup cheese sauce powder.  Add 1 1/2 cups boiling water stir well, and let sit for 15-30 minutes in a cozy.

Pasta with red sauce:  3/4 cup egg noodles or angel hair pasta, 1/4 cup dried beefish bits, 1/4 cup dried tomatoes and sweet potato, 1/4 cup marinara sauce powder.  Add 1 1/2 cups boiling water, stir well and let sit for 15-30 minutes in a cozy. (Variation, mix together marinara sauce and cream of anything soup mixes together for creamy pasta, or use dried pesto, or use pesto and cream of anything soup!)

Stroganoff:  1/2 cup instant rice or 1/2 cup instant mashed potatoes, 1/4 cup dried beefish bits or chunks, 1/4 cup dried peas or broccoli, 1/4 cup stroganoff sauce powder.  Add 2 cups boiling water, stir well and let sit for 15-30 minutes in a cozy.

Thai Peanut Noodles:  1/2 package ramen noodles, 1/4 cup dried chicken, 1/4 cup dried mixed vegetables, 1/4 cup peanut sauce powder.  Add 2 cups boiling water, stir well and let sit for 15-30 minutes in a cozy.

Chicken/Beefish Enchiladas:  1/4 cup instant rice, 1/4 cup dried chicken or beefish bits, 1/4 cup dried beans or mixed vegetables, 1/4 cup enchilada sauce powder, 1/4 cup tortilla chips slightly broken in a separate bag.  Add 2 cups boiling water, stir well and let sit for 15-30 minutes in a cozy.  Add the chips in for the last 5 -10 minutes.

Inca stew:  1/2 cup dried quinoa, 1/4 cup dried chicken, 1/4 cup dried sweet potatoes, 1/4 cup dried tomatoes, 2 tsp chicken broth powder.  Add 2 cups boiling water, stir well and let sit for 15-30 minutes in a cozy.
